No Oven, No Problem

Craving a delicious dessert but don’t have easy access to an oven or ample time to make something extravagant? Here’s a solution–Blackberry Icebox Cake.  This recipe, from Better Homes & Gardens, is super simple and outrageously delicious!

This Blackberry Icebox Cake brings out a strong blackberry flavor in the filling and is complemented by the sweetness of the graham crackers.  It bursts with delicious flavor and is sure to be a crowd pleaser.

And do you know the best part? There are only 5 ingredients!  All you need is whipping cream, cream cheese, blackberry spread, fresh blackberries, graham crackers,  a few bowls and a freezer.

First you have to whip the whipping cream until there are stiff peaks.  In a separate bowl, beat the cream cheese until smooth and then add the blackberry spread.  Then add in half of the whipped cream and the fresh blackberries.  Next, spread graham crackers all along the bottom of a 8×8 pan. Add a layer of the cream cheese mixture and then a layer of whipped cream.  Continue this pattern of layering until the ingredients are gone, finishing with whipped cream on top. Lastly, cover the cake and put it in the freezer for 4-24 hours.  You can serve as is or add blackberries, mint or a lemon peel as a garnish.
